Lentils and Sweet Potatoes Over Rice




I nice warm, slightly spicy dish. I served it with crusty bread and a spinach salad. Another option  would be to serve with warm Naan and creamy yogurt on the side.

1 small red onion
2 cloves garlic
Olive oil
4 medium sweet potatoes cubed
3 carrots chopped
2 cups rinsed lentils
32oz vegetable or chicken broth
2 pieces of candied ginger or 1 teaspoon fresh 
1/4 cup chopped cilantro leaves
6 - 8 fresh kale leaves
1 can coconut milk
1 Tablespoon curry powder; 1 teaspoon cumn; 1/2 teaspoon crushed red pepper; 1/4 teaspoon salt
Juice of 1 lime
1 1/2 cups rice
Cook rice. Heat oil in stock pot or Dutch oven. Dice onion, garlic and ginger and saute until soft. Add sweet potatoes and carrots and saute for 5 minutes. Add more oil as necessary. Add , lentils, kale, broth and cilantro. Simmer over medium heat covered for 45 minutes or until tender. Remove from heat and add lime juice. Serve over cooked rice.
