Meatless Sloppy Joes |
Ingredients
1 Tablespoon oil
1 small onion diced
1/4 yellow pepper diced
2 stalks of celery diced
2 carrots diced
2 garlic cloves minced
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon red pepper flakes
1 3/4 cups vegetable broth
1 teaspoon soy sauce
1 teaspoon honey
1 6 oz can tomato paste
2 teaspoons vinegar
1/2 cup chopped walnuts
1-15 oz can kidney beans drained
1-15 oz can pinto beans drained
Heat oil in large skillet. Add onion, celery and carrots and saute until soft, about 8 - 10 minutes. Add garlic and cumin and saute for 30 seconds. Add remaining ingredients and simmer until slightly thickened, and spices have absorbed, about 15 minutes. Serve atop buns.
