Panzanella
Ingredients:
4 cups crusty bread cubed
3 tablespoons olive oil
1/4 teaspoon salt
1 1/2 cups diced tomatoes or cherry halved
1/2 cup chopped red onion
1 cucumber, peeled, seeded and diced
1 cup diced sweet pepper (red, green, yellow or orange)
1/4 cup fresh basil leaves chopped
vinaigrette dressing
Heat olive then add bread and stir until toasted. In a large bowl mix remaining ingredients. Add toasted bread and toss with vinaigrette. Serve immediately.
